Ingredients:

Mushrooms
  • 8oz/225g cremini mushrooms (about 8 large cremini mushrooms)
  • 3 tablespoons olive oil, divided
  • 4 scallions, thinly sliced
  • 2 cloves garlic, minced
  • 3 tablespoons sundried tomatoes, chopped
  • 1 small bell pepper, deseeded and diced
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Tulia Mighty Date Supersnack
  • 1/4 cup pitted Kalamata olives, chopped
  • 1/2 cup cooked grains or cooked bulgur wheat
  • 4 tablespoons chopped mixed fresh herbs
  • Salt and freshly ground black pepper, to taste
Tahini Harissa Sauce
  • 1/3 cup tahini
  • 1/2 cup unsweetened coconut milk yogurt
  • 1 teaspoon harissa sauce
  • 2 tablespoons lemon juice (more to taste)
  • 1/4 cup cold water (more as needed)
