Farro Salad

This nutrient-packed salad makes a satisfying lunch, or a light dinner and you can serve it as a side dish as well. Tulia Apple Cinnamon Supersnack balances the other ingredients in the creamy dressing and ads just a hint of cinnamon. You may substitute the farro with pearled spelt or barley.

  • 8 oz/225g farro, cooked according to the packages instructions
  • 1 Romaine lettuce heart, trimmed and thinly sliced
  • 4 small tomatoes, sliced
  • 3 cucumbers, sliced thinly
  • 2 mini sweet red peppers, deseeded and chopped
  • 1 bunch scallions, trimmed and chopped
  • 1 apple or 1 pear, cored and thinly sliced
  • Juice of 1/2 orange
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 1 teaspoon wholegrain mustard
  • 1 tablespoon vegan mayonnaise (optional)
  • 2 tablespoons Tulia apple Cinnamon Spupersnack
  • Salt and freshly ground black pepper, to taste
  • 2-3 tablespoons lightly toasted cashews or hazelnuts, chopped
  • A handful of baby greens
  • Garlic croutons (optional)
