Farfalle Pasta with Orange and Ginger Sauce

  • 8 lb/225g farfalle pasta (or another pasta of choice)
  • 2 tablespoons olive oil
  • 2 shallots, finely chopped
  • 1 (1-in) piece fresh ginger, finely grated
  • ¼ cup balsamic vinegar
  • 2.5 packets Tulia Apple Cinnamon Supersnack
  • Juice of 2-3 oranges (about 1 cup)
  • Zest and juice of 1 lemon
  • Salt and freshly ground black pepper
  • 1/3 cup lightly toasted pumpkin seeds, to garnish
  • 1 tablespoons fresh chives, finely chopped
