1. Grill or roast the eggplants for 35 to 40 minutes, turning them halfway, until completely cooked. Set aside to cool completely. 2. Cut the eggplants in half lengthwise and scoop out the flesh and place in the bowl of the food processor along with the remaining ingredients. Season to taste and pulse a few times until the ingredients are just combined. Do not over process. 3. Transfer to a serving bowl and garnish as desired before serving. Enjoy!
