1. Bring a large pot of salted water to a boil and add the cauliflower and broccoli florets; boil for about 2 minutes, drain in a colander and run under cold water. Set aside. 2. Blend all dressing ingredients until very smooth and creamy, adding some water as necessary to get a dressing consistency. Season with salt and pepper. 3. Combine broccoli, cauliflower, chickpeas, bell pepper, fennel bulb, and lettuce in a large bowl and drizzle with the dressing. Toss well and serve. Enjoy!
