Bulgur Salad with Carrot, Turnip, and Celery

Full of flavor, this colorful and satisfying salad is great as a side dish as well as a light lunch. You can also use it in wraps for a healthy packed lunch. The bulgur wheat adds texture and Tulia Mighty Date Supersnack adds creaminess to the simple lemon and olive oil dressing.

  • ½ cup/4oz/115g bulgur wheat
  • 2 medium carrots, trimmed and coarsely grated
  • 4-5 radishes, trimmed and sliced
  • 1 small turnip, trimmed and coarsely grated
  • 1 celery heart, diced
  • 1 apple, cored and thinly sliced
  • 1/3 cup fresh parsley, chopped
  • 1 tablespoon Tulia Mighty Date Supersnack
  • Juice and zest of 1 lemon
  • ¼ cup olive oil
  • 1 small garlic clove, mashed (optional)
  • Salt and freshly ground black pepper, to taste
  • ¼ cup pomegranate seeds
  • ¼ cup chopped nuts of choice (optional)
