Minted Watermelon and Strawberry Salad with Dukkah Tahini Dressing

Delightfully refreshing and bursting with flavors, this is the perfect salad for a warm summer day. Dukkah is a nutty Egyptian spice mix that you can easily prepare at home. Store the mix in a jar for up to 3 months and use for dipping or to scatter over salads and vegetable dishes.

Ingredients:

Dukkah
  • 1/2 cup mixed toasted nuts such as hazelnuts, cashews and almonds
  • 1/4 cup toasted sesame seeds
  • 1 teaspoons ground coriander seeds
  • 1 teaspoon ground cumin seeds
  • 1/2 teaspoon Aleppo pepper or chili pepper (to taste)
  • 1 teaspoon ground fennel seeds (optional)
  • Salt and pepper to taste
Dressing
  • 2 tablespoons tahini 
  • 2 teaspoons Dukkah spice mix
  • 1/3 cup unsweetened plain plant yogurt
  • Juice of 1/2 lemon (or to taste)
  • 2 tablespoons olive oil
  • 3 tablespoons cold water (or as needed)
Salad
  • 2 cups diced seedless watermelon
  • 1/3 cup shredded fresh mint leaves
  • 1 cup hulled sliced strawberries
  • 1 cup wild arugula
  • 2-3 small cucumbers, sliced
  • 1/4 cup pitted sliced green olives (optional)
