Ingredients:

Dressing
  • 1 teaspoon Tulia Mighty Date Supersnack
  • 1/3 cup tahini
  • 1 tablespoon olive oil
  • A pinch of ground cumin
  • 3 tablespoons lemon juice
  • 1/4 cup water
Salad
  • 4 roasted peppers from a jar, diced
  • 1 green chili pepper, deseeded and chopped
  • 1 apple, cored and thinly sliced
  • 1 fennel bulb, thinly sliced
  • 1 (15oz/425g) can chickpeas, drained
  • 3 cups shredded lettuce
  • 3 tablespoons pitted olives, sliced
Garnish
  • 1/4 cup toasted walnuts, chopped
  • 2 tablespoons fennel fronds or dill, finely chopped (optional)
